Some have stories passed down from generation to generation, Amanda Quick’s family has passed down their treasured, “Poor Man’s Chocolate Cake.” “It’s been in the extended family for years and three years ago, my Aunt Rhonda gave the recipe, as well as baking equipment and her unceasing support for my passion of baking.” She made sure to give credit to one of the people that helped shape her budding career and enthusiastically continued telling her story.
“I have always enjoyed baking, but I never thought that I could make a career out of it,” confessed the young, but talented baker. “After high school, I didn’t know what I wanted to do. I enrolled in a multi-disciplinary studies course and brought in cupcakes for a friend’s birthday and that’s when it all changed.” Her friends raved about the best cupcake they’d ever had and encouraged Amanda to look into baking school. With their stated recommendation, she researched and applied to Schenectady Community College’s baking program and enrolled the next day.
“I knew the moment I walked into the classroom that it was what I wanted to do for the rest of my life.” There was something about her certainty; she was in love with her career, something in today’s world is such a hard thing to accomplish. She explained in detail as to why she transitioned her passion from baking pastries to bread; all the while, taking moments to elaborate, to a non-baker, what she meant when she said, how baking was such a “fascinating process.” It seems like any other career path would never suit her the way that baking does, it was inherently clear that she was meant to do this.
She paused. “And that’s why I love baking!” It was evident that baking had always been a part of Amanda’s life in some capacity; whether it was helping out a family member, baking for classmates, or enjoying her Aunt Rhonda’s “Poor Man’s Chocolate Cake.” In one way or another, the things that we loved growing up always find a way back into our lives as it did for Amanda. My final question I asked was if she would have her family cake at her own wedding; she enthusiastically admitted that she had already gotten married and that unfortunately, she didn’t, but has made it for dozens occasions in the past and many more to come.

Poor Man’s Chocolate Cake
Ingredients:
3 cups all purpose four
2 cups sugar
2 tsp baking soda
1 tsp salt
2 cups water
2 Tbsp vanilla
2 Tbsp vinegar
6 Tbsp cocoa
10 Tbsp vegetable oil
Instructions:
1. Preheat oven to 350
2. Place all ingredients in a bowl and mix until combine.
3. Grease 2 8inch cake pans and pour batter into pans.
4. Bake for 45 to 50 minutes.
